Raw cake without the scales!
As I mentioned before I really don't like to scale ingredients so this is everything more or less style 😁
We are visiting my parents these days and the cake is basically from ingredients I have found.
Base layer:
- Dried plumps (super good alternative to dates) maybe 7-8
- Almonds around 60-80 gr.
- 2 spoons of coconut oil
Blend it all together and press in the baking tray ( I put some paper around so it was easier to take it out later on. As well I used a bowl because it was a small cake)
Middle layer:
- Cashews around 80-100 gr
- Coconut oil 2 tbl spoons
- Coconut milk around 6-8 tbl spoons
Blend all together by adding coconut milk untill it is smooth and creamy. Coconut butter would be great addition so it is more firm later on. Add on the base layer.
Top layer:
- Persimmon (Mango goes well as well) 1
- Coconut milk 3 tbl spoon
- A bit of vegan gelatin
Soak nuts two hours in the cold or 20 min in the hot water. Blend together a fruit and milk and add gelatin later to make it more firm. Add on the cake. Fresh berries would be super tasty instead of a fruit as well. But I didn't have it at the time.
I kept it in the fridge, but it is okay to keep it in the freezer as well. Serves normally 8 people.
It is plant based, gluten free and without any added sugars. At least 10 people tasted it as liked it (or were polite 😂)
I used a small blender as it was a little cake so no point of a powerful big kitchen combine. And it took me less than 30 min. To prepare.
