For the last year you can find granola everywhere! So sharing with you one simple recipe and I believe healthier because there is just a bit of sweetness added, while in the brought one it is simple.too much sugar!
Nutty homemade granola 🌿 🌾 🌍
The ingredients listed are for around one kilogram of amazing granola:
- 600 gr. rolled oats
- 160 gr. pecans
- 160 gr. almonds
- 80 gr. pepitas
- 80 ml. coconut oil
- 1 teaspoon of cinnamon
- 1/2 teaspoon of vanilla powder
- 40 ml. of maple syrup (agave syrup or honey works perfectly too)
✅ Pecans and pepitas are popular in Mexico so I used them as I made it after market day in Mexico. But you can simple use any other nuts or walnuts and sunflower seeds.
The process:
Over a low fire melt the coconut oil and then add rolled oats, nuts and pepitas. Mix everything then add cinnamon and vanilla and fry it over a medium fire for around 10 minutes, being sure to stire and keep it moving all the time, until you can see that the oats and nuts are toasted.
When the rolled oats look golden, add the maple syrup and mix it well. Fry it for a couple of minutes more, but be careful not to toast too much!
Let your fresh made granola cool down, the easiest way is to spread it out on the surface or a bit plate. If you would like to have it stuck in pieces then press them together with a spoon. After it is cold you can store it in a jar.
✅ You can bake in the oven, but at that time I didn't have oven so used the pan.
✅ Feel free to add any of seeds like hemp, chia, dry berries like goji usually goes very well.

I think I like granola mostly with plant based milk, but sometimes it is nice to make kind of granola bowl with whatever I can find in the kitchen
